Thanksgiving meal on a school lunch trayHow do you prepare and serve 33,000 Thanksgiving meals with all the trimmings and do it successfully? It is not easy but that is exactly what the lunch ladies and Nutrition Services staff accomplished this week. They took on the enormous task, providing a Thanksgiving meal to students in every single Jordan School District school. They also made sure teachers, aids, office staff, custodians and maintenance workers were treated to a turkey dinner.

When you break it down, this is part of what went into making the mega turkey dinner:

  • 4,000 Pounds of Turkey
  • 25,000 Homemade Rolls
  • 25,000 Servings of Mashed Potatoes

While the Thanksgiving meal is always a big hit, the most popular menu item in our schools is the lunch ladies’ homemade macaroni and cheese. If you would like to add mac and cheese to your Thanksgiving dinner table – here is the secret recipe.

Jordan School District Macaroni and Cheese (12 servings)

  • 3 1⁄3 cups milk
  • 4 1⁄2 tbsp margarine or butter
  • 1 teaspoon dry mustard
  • 1⁄8 teaspoon pepper
  • 16 ounces elbow macaroni
  • 1 3⁄4 pound processed American cheese

Combine milk, margarine, mustard, pepper and cheese in a pan. Stir over medium to low heat until melted and creamy. Cook macaroni in boiling water for about 8 minutes or until al dente. Do not overcook. Drain well. Add macaroni to cheese sauce and stir well. Enjoy!
